So, we're still doing pretty well with the pantry challenge, but the kids have been with their dad this weekend, so I've been eating baked potatoes and cereal this entire weekend! We didn't really stick to the menu exactly for last week because Nona gave us some fresh basil and we needed to use it up before it went badly, so I did some rearranging of the meals. However, basil is apparently a super herb, because what she gave us is still growing strong!
We haven't eaten the fish and chips yet or the honey orange pork tenderloin and fingerling potatoes, so we'll have those this week.
Sunday Night Meal
Pasta with homemade tomato sauce and garlic breadsticks
I need to use up the homemade tomato sauce that was frozen and I thawed it out late last week.
Monday:
B-Hard Boiled Eggs, Fruit, and Toast
L-Fish and Chips/Peaches
D-Orange Honey Pork Tenderloin and Fingerling Potatoes
Tuesday:
B-Leftover Fingerling Potatoes (if there are any) and scrambled eggs
L-Beef and Rice w/ cut Veggies and Dip
D-Beans and Cheese w/ Tortillas for dipping, fruit
Wednesday:
B-Yogurt and Fruit
L-Baked Potatoes w/ Broccoli and Cheese, salad?
D-Chicken Tenders, Mashed Potatoes
Thursday:
B-Breakfast Sandwiches and Peaches
L-Homemade Pizza Sticks and Corn on the Cob
D-Chicken and Noodles in Stock w/ veggies (Crockpot?)
Friday:
B-Cinnamon Rolls (freezer)
L-Garlic Orzo w/ Vegetables and Parm
D-With Dad
What I spend this week-
Earth Fare $18 (Gallon of Organic Milk, Vinegar, Vanilla Creamer and something else that I cannot remember)
Farmer's Market $20 (8lbs of peaches and a pint of honey)
I'm planning to puree the peaches for using in our yogurt and in our applesauces in the winter.
